Smoked salmon and rocked salad pasta

Today a quick but yummy dish:

pasta with smoked salmon and rocked salad.

First of all on one side in a sauce pan boil the pasta. Add it to the water only once it is boiling. Stirr and cook till it is “al dente”. (tasting is always the best way to check the perfect cooking point).

On the other hand in a sauce pan stirr in some extra virgin oil one onion, cut in small pieces together with some pieces of garlic.


When the onions are a bit cooked add the smoked salmon cut in small pieces, and stirr.


Add the pasta and the rocked salad.



And that’s it!


Some ginger powder to decorate and extra virgin olive oil to garnish.


And enjoy!

Simple, quick and simply delicious!

Pumpkin cous cous

Another very simple and quick recipe: cous cous with pumpkin!

Let’s start cooking the pumpkin in a sauce pan.

Stirr one yellow onion with garlic in a sauce pan with extra virgin olive oil.

Add the pumpkin washed and cut in small rectangula pieces.


Let the pumkin cook till it gets softer.

Once cooked, add some cous cous and water.


Stirr a lot not to stick it.

Wait till the cous cous is cooked (you will see it from the dimensions: bigger and also if you taste it, it won’t be harde anymore).

Let all the water evaporate while the cous cous’s cooking, stirring also.


Leave the cous cous another few minutes in the sauce pan to settle.


Serve it hot and garnish with extra virgin olive oil and pepper if you wish.


You could also add some ginger, even before in the sauce pan while cooking. And chili if you wish, for a spicy touch.

Whole grain pasta with fresh celery, walnuts and botargo

A summer plate.


Easy, very quick pasta.

Ingredients: just the whole grain pasta (here “molle” shape), boiled on one side, then celery, a bit of garlic, walnuts, botargo in powder …


Let’s start boiling the pasta.

In a sauce pan stirr some garlic pieces with extra virgin olive oil.


Add the celery cut in pieces (you could make them even smaller than the picture, and if you wish use the mincer to make them really really tiny).


Stirr just a little bit (celery is nice even raw, so it’s just to soften it a bit and giving it extra flavour.

Add the pasta and stirr.


In the plate some walnuts and the botargo.

Garnish with extra virgin olive oil and enjoy!

Aubergines … grilled, or with olives and tomato sauce


lovely vegetable …

One possibility: grilled, with a simple sauce persil-garlic-extra virgin olive oil.

Another way … cooked in a tomato sauce with black olives and red onions … really tasty!

Here the two recipes together.


Let’s start from the grilled ones …


Like they were thin steaks, you have simply to grill them on the fire.


Garnish with the persil minced with the garlic and extra virgin olive oil.


For the tomato sauce ones.

First stirr in a sauce pan one onion cut with some garlic and extra virgin olive oil.

Add the aubergine in cubes (cut).

Stirr a very few minutes then add the tomato sauce with some water not to make it stick and to let it cook too.


Add some black olives. Stirr and let the water evaporate while cooking the aubergines (they have to become softer under a fork, not anymore hard texture).

And that’s it!


As the first picture you could enjoy it like this (with additional extra virgin olive oil), or together with the grilled aubergines if you wish.


Another option would be to add some cous cous in the cooking water…

Spring vegetables quick dinner

My quick, light, vegetables dinner …

first I’ve stirred one onion and garlic with extra virgin olive oil,

then I’ve added some peppers and a few bites of fennel.


Some walnut pieces.

Asparagus just boiled.


And that’s it.


Botargo and extra virgin olive oil dressing.

Brown rice with salmon and pumpkin …

Today something new …

Brown rice, with salmon and pumpkin!!!

Healthy pumkin (vitamin A) and salmon (rich in omega-3) …

Let’s start with cutting one onion (blond as well is fine), and some garlic.


Stirr them in a sauce pan with some extra virgin olive oil (not too much).

Then cut the pumpking in small cubes (pieces).

Add it in the sauce pan when the onions are a bit shrunk. Stirr and let the pumpkin cook and become softer.


Next to the sauce pan with the pumpkin, cook some brown rice.


Then add the smoked salmon cut in small pieces.

Stirr. Then add the persil cut in small pieces too.

Add the rice, and go on stirring for a very few minutes.

And that’s it!



Enjoy! and garnish with extra virgin olive oil and some ginger powder!
