Amazing and simple dinner.

I’ve just cooked it and I am really enjoying it….

So let’s start from the meat. A peace of beef with fresh green pepper.

Cook it with some extra virgin olive oil in a sauce pan and garlic too.

Aside boil the rapini vegetables.

Rinse them. And then stirr fry them in a sauce pan with extra virgin olive oil and garlic.

Just to remove the excess of water and to give it a special touch add also half a glass of white wine (mine was a Sardinian Vermentino)

Next to each other in the plate, and simply enjoy.

“Ruote” pasta with aubergines and spicy tomato sauce

Tasty pasta with spicy aubergines and tomato sauce …

Let’s start from garlic, extra virgin olive oil, one cut onion.

Let it all stirr a few minutes, then add the aubergine cut (one or two depending on size).

Let it shrink a bit then add the tomato sauce. Add some water too, not to burn it all.

Stirr.

Next to it cook some rotelle pasta in boiling water.

Add, when cooked, the pasta to the aubergines and sauce.

Stirr.

Dress in the plate with chili, pepper and extra virgin olive oil and salt (if you wish).

Spring vegetables quick dinner

My quick, light, vegetables dinner …

first I’ve stirred one onion and garlic with extra virgin olive oil,

then I’ve added some peppers and a few bites of fennel.

Mushrooms linguine pasta

Mushrooms … with linguine pasta!

Today I’ve used dried ones. They have to be first put in warm water for 20 minutes. Then rinsed and then they’re ready to be cooked.

I’ve boiled the pasta.

After having let the mushrooms rest for 20 minutes, I have rinsed them, then put them in a sauce pan with some garlic and extra virgin olive oil.

Stirring not to burn them, but they have to cook.

Finally I’ve mixed the pasta.

And that’s it.

Some white pepper, more garlic, chili powder and extra virgin olive oil.

Peppers cous cous

Peppers … healthy, light … vitamins A …

So I’ve decided today to prepare an easy and quick dinner: peppers cous cous.

I’ve started with the usual sauce pan and extra virgin olive oil, garlic, one onion.

When the onion starts to be a bit cooked, I’ve added the peppers (one yellow, one red and one green).

Stirring.

Some anchovies paste.

Cous cous and some water.

Liver and asparagus

Simple, easy and quick.

So just cook the liver in a sauce pan with nothing at all. If the pieces are very thin they will cook in a very short time.

Just turn it not to burn it.

Next cook the aspargus, just boiling them is some boiling water.

Garnish with extra virgin olive oil and spices if you wish,

Octopus salad

Octopus …

Usually it is sold already cleaned.

So just boil it like it is for around 50 minutes or more if necessary, for the meat to become soft.

Then wait for the water to get back at room temperature.

Remove the black top skin. And the spine in the middle (bone).

Cut the octopus in small pieces.

It’s ready this way for lots of receipes i.e. with boiled potatoes in salad …

Or just with lemon and fresh persil …

Fried anchovies …

The most diffucult and long part is cleaning the anchovies.

You have to cut the head, the tail, remove the interior part (cutting the fish in two) the spine and also another black bones line along the whole back (from the pictures you see that the body has to be split in two halves, and the black bone line is just in the middle of the two parts of the flat body).

Then just rinse them and turn them in a couple of eggs.

Then in a bed of breadcrumbs ready to be fried.

Beware that it’s raw fish. So to avoid i.e. Anisakis problems wash your hands and cook the fish properly (which means enough time).
